Palmilla's signature restaurant is headed by Michelin starred chef, Jean-Georges Vongerichten. Market brings to life Jean-Georges French roots with Asian influence to reflect his travels in the region and the freshness and variety of Mexico’s rich culinary tradition and ingredients.

Bucking the trend for rustic oceanside hotel dining, Market has a sleek and shiny interior invoking the glamor of a city restaurant.

Eating here is always a special occasion and we rate it as one of the best hotel dining experiences in Mexico. The special degustation menu is highly recommended, and those lucky enough to sit at the invitation-only chef's table in the show kitchen are in for a real treat.

If you can't bear to sit inside on a balmy evening, there are also tables on the terrace and verandah. The dress code is "Resort Elegant" in the evening - button-down shirts, dress slacks, evening dresses etc. Jackets are optional. In the daytime it's more casual, but shoes and bathing suit cover-ups are required.

The glamorous bar at the restaurant is a memorable place to watch the sun set. Live entertainment, often Jazz, can be enjoyed here before and after dinner.
